Ton Tassanakajohn is one of the most exciting Thai chefs around right now. He named his restaurants Le Du which translates to ‘season’ and accordingly, seasonality is to be found beautifully interpreted throughout the menu. Every ingredient is locally-sourced and at-the-moment; his dedication to this cause landed Le Du on the third place of best restaurants in Bangkok – a truly impressive feat for such a young chef.
After training and interning in the US, Tassanakajohn brings modern techniques to local ingredients and flavours, hand-spinning a cuisine as a creative take on traditional Thai. His dishes are beautifully, wildly unpredictable, an example being the lobster with coriander snow and caramel sauce. Best bet is to pick one of the set menus, sit back and enjoy the show. Le Du’s wine selection is incredible, and it’s no wonder, Ton is also a gifted sommelier.
